Specialty Livestock Value-Added Program
The Agrifood Innovation Fund program established in 1998 assists in developing Saskatchewan’s specialty livestock meat industry by adding value to meat and meat products.
SLVAP will assist producers in exploring the options and potential for adding value to specialty livestock products, product diversification, market accessibility and increasing overall profitability.
Services offered include:
- Specialty meat processing and product development;
- Meat quality and palatability issues including research on specialty meat flavour and shelf-life extension;
- Technical assistance, guidance and trouble shooting;
- Chemical analysis including flavour and fatty acid profiles of specialty meat and meat products;
- Microbiological and sensory evaluation of specialty meat products;
- Seminars, newsletters and fact sheets;
- Resources for ingredients, packaging and equipment.
